I was in Vegas last month, and played that headhunter tournament in Treasure Island that you mentioned. And yes, it was fun

Although I didn't do good in it. But I'd suggest trying it out. The TI poker room is pretty small, but they have great high hand jackpots. The best royal flush was around $5000.
Skill levels are really low on the below $100 buy in tournaments. In Flamingo where we played a couple of tournaments with my friend the participants are mostly middle aged or older tourists who play very loose. Blind structure is steep, so it feels like a live turbo tournament.
Caesars Palace has a big poker room with lots of cash games and tournaments.
